For me, recipes have to be simple and as quick as possible, but still delicious. Standing at the stove for hours is not my passion and Christmas is no different. For today's recipe, I really enjoyed working with my long-time partners fromFRIEDRICHS, the first Hanseatic fine fish manufacturerteamed up. And the star of it all is a real masterpiece of salmon!

That's what makes it a noble delicacyFRIEDRICH'S masterpiece Kodiak wild salmon fillet, which is exclusive to theFirst Hanseatic fine fish manufacturergives. It's the best piece from the back of theWild coho salmon from Alaska, a salmon, using the trolling method with thefished by handbecomes. The salmon are pulled from the open sea individually and according to strict catch quotas, which makes the catch particularly sustainable. Due to the diet of shellfish and crustaceans in its natural habitat, this special salmon is a strong red-orange in color, its meat has a delicate consistency and, compared to farmed salmon, it is particularly low in fat.FREDERICKS Fine fishfurther refines the fillet piece by hand, which makes the masterpiece a particularly fine salmon specialty. The hand-fished wild Coho salmon is a real rarity that is only available in GermanyFREDERICKSgives.

So this is not a piece for every day! But definitely one for Christmas and many other festive moments when you want to spoil dear guests or just yourself with a delicacy. There are so many ways in which you can serve this masterpiece and simply pure it is an absolute delight. Nevertheless, I came up with this small, delicious appetizer recipe...

  1. Preheat your oven to 220°C top/bottom heat.
  2. Peels themsweet potatoesand cut them into slices approx. 2 cm thick. You need 6 slices for 6 portions of this little appetizer.
  3. Then add 1 tablespoon of sunflower or rapeseed oil and a pinch of sea salt to the sweet potatoes and mix the whole thing so that the slices are coated with the oil on all sides.
  4. Place the sweet potato slices next to each other on a baking tray lined with baking paper and let them cook in the oven for 20 - 25 minutes.
  5. In the meantime, you can peel and finely dice the avocados. Mix the cubes in a bowl with 1 tablespoon of lime juice - for flavor and to prevent them from browning.
  6. Then peel the kiwis and cut the pulp into small cubes. Add them to the avocados.
  7. Stir the mixtureAvocado and Kiwicarefully and season it to your liking with approx. 1 teaspoon of agave syrup, a pinch of sea salt and a pinch of chili flakes. If you prefer this avocado-kiwi salsa more tart, you can also reduce the agave syrup or leave it out completely.
  8. Cuts thatFRIEDRICH'S masterpiece Kodiak wild salmon filletin slices. Depending on your taste and the size of your sweet potato slices, you will need 3-5 slices of the delicious wild salmon per serving.
  9. To serve, simply add about 2 heaped tablespoons of the avocado-kiwi salsa to each sweet potato slice. One is very helpful*Metal serving ringin a suitable diameter.
  10. Then top the salsa with a few slices of the smoked salsaKodiak Wildlachs.
  11. Sprinkle the whole thing with some black sesame seeds and garnish your starter with a few if you like*Chili father. This not only looks beautiful, but also gives the creation a little taste kick.

My advice…By the way, you can't just serve this appetizer with warm sweet potato slices directly on the oven. It also tastes wonderful with cooled sweet potatoes. This means that the components can be prepared completely, then just put together and quickly brought to the Christmas table. ;)

Very simple and yet very elegant. I will serve exactly this delicacy on Christmas Day. We will celebrate this Christmas in a very small circle. Just Stephan's parents and us. The really big, annual family remmidemmi in my family is actually canceled this year. We all agree on that, no matter how wistful and sad it makes us. We still plan to make the most of this unusual celebration and that includes exceptionally delicious food.
